Tear off the Swatches Panel and position it near the ( also torn off) Gradient Panel

Swatch and Gradient Panel

You can now drag a colour swatch directly onto the Gradient Bar

Simples.

Turn it permanently off for all new documents by editing the basic paragraph style
with no document open

Find the Paragraph Styles Panel and right click the Basic Paragraph Style name

Simply untick the Hyphenate option and click OK.
